We just hosted a Valentine’s class for the FOOD LA LA Cooking Club and one of our members asked Jen for a recommendation for a fun V-Day cocktail. We had a big bag of freeze-dried raspberries so we started to tinker (Trader Joe’s has the best deal on freeze dried fruit!)
Voila: The Lover’s Lemon Drop! It’s pink, tart, not overly sweet. You’re gonna lu-huv it.
RECIPE:
Ingredients:
1/2 cup sugar + 2 TBS for sugar rim
1/2 cup dehydrated raspberries
1 lemon, juice
1 can of chickpeas, aquafaba
1.5 oz vodka
Garnish: raspberries, lemon wheel, sugar rim or rose petals
Steps:
Raspberry simple syrup: Add 1/2 cup dehydrated raspberries to food processor and pulse until fine dust, set aside. In a small saucepan, combine 1/2 cup of sugar with 1/2 cup water and stir until sugar dissolves. Add dehydrated raspberry dust, stir to combine then fine strain out seeds. Set aside and let cool.
(Optional) sugar rim: Pour sugar onto plate. Rub rim of glass with halved lemon. Turn glass upside down to slowly turn the glass, collecting sugar on rim. Set aside.
In a shaker, combine 1 oz lemon juice, 0.75 oz raspberry simple syrup, 1 oz aquafaba and vodka. Fill shaker with ice and shake vigorously for 15-20 seconds.
Fine strain and serve into martini style glass! Garnish with raspberries (lemon wheel or rose petals) sip and enjoy!
* Note, if you want to make it with egg white instead of aquafaba, substitute egg white into the shaker and shake it first without ice, then add ice and shake again!
