I LOVE watermelon. And when it’s so hot outside, it’s the most refreshing treat. Whole watermelons are typically crispier than their pre-cut counterparts, but I’m not often able to eat the whole thing before it goes bad. Cue: frozen watermelon.
Serve the frozen watermelon cubes in fun, fancy cocktail glasses (these are gold-rimmed champagne coupes we received as a wedding gift). Garnish with mint leaves and lime, then pour sparkling water, kombucha or even lemonade over top (and maybe even a splash of vodka?!).
Food La La Recipe: Frozen Watermelon
Ingredients:
1 organic watermelon
Optional: mint, sparkling water, thinly sliced lime
Steps:
Cut watermelon into 1.5” rounds.
Use a sharp knife to cut around the rind and then discard.
Cut circle into as big of a square as possible, then cut into a grid to produce cubes.
Arrange cubes on a parchment-lined baking sheet and put in freezer.
Place a few cubes in a cocktail glass, top with sparkling water, a mint leaf, and a slice of lime
