Stay cool with these dairy-free (and refined sugar-free) popsicles! They’re easy to make and can be amended to include your favorite fruit(s). Try layering in some blueberries to add a festive pop to your Fourth of July celebration!
If you’re able, make your own cashew milk (blend 1 cup cashews and 3 cups water on high for 2 minutes—works best with a powerful blender). It will make the popsicles extra creamy and flavorful! I love the addition of the crispy freeze-dried strawberries on the top (bottom of the popsicle once you flip it over!) because they get nice and chewy after freezing. If you can’t find good fresh strawberries, substitute all the strawberry in this recipe for freeze-dried!
Food La La Recipe: Strawberries & Cream Popsicles
Yields: 10 popsicles
Ingredients:
10 strawberries, washed and quartered
2 cups cashew milk
1 TBS maple syrup
1 TBS vanilla bean paste
¼ tsp salt
Popsicle sticks
Optional: freeze dried strawberries
Steps:
Muddle the strawberries then divide evenly into your popsicle molds.
Combine the cashew milk, maple syrup, vanilla, and salt in a blender and blend for 10 seconds
Pour milk mixture over popsicles.
Optional: sprinkle crushed freeze-dried strawberries over the tops of each mold, then add sticks and freeze.
